Who loves carrots? Honestly I do not know anyone who might not like them –my son is saying ‘ Mama Kaka please’ when he fancy them.

Due to its beautiful orange colour it is a source of amazing anit-oxidant - beta- carotene – it protects us against sun damage and takes care of our beauty! Beta-caroten is also a precursor for vitamin A beta. We need vitamin A for healthy skin and mucus membranes, our immune system, and good eye health and vision.

And another great news about carrots is that they are a source of phytoestrogens – they interact with oestrogen receptors regulating oestrogen level in the body - especially beneficial for women with oestrogen dominance. Therefore phytoestrogens have also a protective effect on breast cancer and endometrial cancer.

Shall we say now ‘one carrot a day... ’?

To encourage you to eat more carrots here is the recipe for amazing BREAKFAST CARROT PANCAKES

4 medium size thinly grated carrots

1,5 glass of milk (goat’s milk in my case)

0,5 glass of grounded flax seed

1,5 glass of spelt flour, you can also mix it with buckwheat flour

1 egg

1 tbs chia seeds soaked in 2 tbs water for 5 mins

½ tbs baking soda

2 tbs honey

2 tbs xylitol

1tbs butter

2 dashes nutmeg and 1 tsp cinnamon - do not forget about them as they add the flavour

Blend everything together or mix with a mixer and fry on the frying pan with coconut oil.

Give your favourite topping on the top!
