I would like to share with you one of a very universal recipes you can use when you lack of the inspiration for cooking. It is universal as you can replace some products with another and the taste is always really nice
Worth trying for these coming cold days, it is also immune boosting so give it a try and let me know if you liked it:)
Here is the base:
1 fried onion (chopped)
2 cloves of garlic
1cm of ginger chopped
1 can of coconut milk
2 spoons of curry powder
Vegetables to choose
1) 2 medium sweet potatoes and 1/2 celeriac
2) 3 parsnips and 1/2 apple + almond flakes
3) 2 medium sweet potatoes + 2 large beetroots
Pulses to choose:
1) 1/2 cup red lentils
2) 1/2 cup green lentils
3) 1 dose of chickpea
Fry onion in the frying pan, add garlic and ginger at the end of frying. Put all ingredients into the pot and cook till all vegetables are pulses are cooked, season with salt. While cooking with lentils you can also blend the soup.
Try experimenting with other vegetables as well!
