Luckily I had time to bake something during the weekend.
I chose millet buns as I always try to replace wheat by another grains while baking. Millet is a gluten free grain which is very much alkalising so I recommend using it in the kitchen. The buns are made of cooked millet grains, spelt flour and yeast with added dates and cinnamon for sweetness - yummy, no?
Recipe is very simple:
100g of millet - cooked till soft
2,5 cup of spelt flour
3/4 cup of warm water
7g of dried yeasts
1/2 spoon of honey
10 dates chopped
Cinnamon
Mix all ingredients together so that we achieve a nice dough, and let it grow in warm place for 1 hour.
Make small buns and bake them for 20mins in 200 degrees.
